Amish Honey Oat Bread

- I love serving this bread hot (you can even pop a slice into the microwave for 20 seconds, or in the toaster!), with cinnamon and butter on top. Everything's better with a little bit of cinnamon! :)

Ingredients

  • 1 cup + 2 tbsp. dry oats

  • 8 oz. plain Greek yogurt

  • 1 egg

  • ¼ cup canola oil

  • ¼ cup honey

  • ¾ cup skim or oat milk

  • 1â…“ cups whole wheat flour

  • 1 cup all-purpose white flour

  • 2¼ tsp. baking powder

  • ¼ tsp. baking soda

  • ¼ tsp. salt

Preparation

Step 1


Preheat oven to 375°



Step 2


Grease the bottom and sides of a 9x5 loaf pan with butter. Sprinkle 1 tbsp. of oats across the bottom.



Step 3


In a mixing bowl, mix together 1 cups of oats with Greek yogurt, egg, oil, honey, and milk.



Step 4


In a separate bowl, mix together flours, baking powder, baking soda, and salt.



Step 5


Combine the two mixtures, blending gently but thoroughly.



Step 6


Pour into grease pan. Sprinkle remaining tbsp. of oats across the top.



Step 7


Bake 40-50 minutes.
