Ri's Recommendations
- 1-2-3-4 cake goes best with homemade whipped cream (pictured above) or Grandmom Corr's go-to royal icing: combine powdered sugar, extremely softened (but not melted) butter, vanilla, and Half & Half until desired sweetness/consistency. (Optional: a dash of cocoa powder for chocolate icing). Top with coconut flakes, sprinkles, or chocolate shavings.

Ingredients
1 cups butter, room temperature
2 cups sugar
3 cups flour
4 eggs
1 cup whole milk, cold
3 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
Preparation
Step 1
Preheat oven to 350°
Step 2
Combine flour, salt, and baking powder in a bowl. Set aside.
Step 3
In a mixing bowl at medium-high speed, beat butter and sugar until fluffy. Add eggs, one at a time.
Step 4
At low speed, alternate adding the dry mix and the cold milk to the in-progress batter.
Step 5
Add vanilla. Beat batter at medium-high speed for 4-5 minutes. Batter will be light and fluffy.
Step 6
Distribute batter into 2 8-inch circular cake pans (or cupcake tins; batter will make ~20 cupcakes). Bake for 30-40 minutes.
