Ri's Recommendations

- Be conscious of how long the pie filling will take in the oven: if it's a long bake, only prebake the crust for 5 minutes. If it's a shorter bake, you can prebake the crust for a full 10 minutes.

- Keep an eye on the pie crust throughout the final bake; if you're sensing that the edges are subject to burn before the bake is complete, remove the pie from the oven, wrap the edges of the crust in tinfoil, then continue the bake.

Ingredients

  • 2¼ cups flour

  • 2 sticks cold butter, cubed

  • ¼ tsp. salt

  • 6-8 tbsp. cold water

  • ¾ cup honey

  • ¼ cup whole milk

Preparation

Step 1

Preheat oven to 350°

Step 2

In a large mixing bowl, combine flour and salt. Cut cold butter cubes into the flour mixture by hand. Add water gradually to form dough (1 tbsp. at a time until desired consistency is reached). Continue to knead by hand until fully combined.

Step 3

Create a dough ball by hand. Cover tightly in plastic wrap, then chill in the fridge for 30 minutes.

Step 4

Roll out dough and place into an 9 inch pie pan. Swirl the honey all over the crust (center, sides, and edges!).

Step 5

Prebake the crust for 5-10 minutes. Remove crust from the oven, pour in pie filling, and follow filling instructions for the rest of the bake.

Step 6: Optional

This recipe will likely give you a bit of extra dough for decoration on the top of your pie! If you're using the leftover dough for decorations (such as the leaves on my sample photo above), cut out the desired shapes, place them on a lined baking sheet, and bake at 350° for ~20 minutes. Place the baked decorations on your pie in the last 5 minutes of its bake, or right when it comes out of the oven.
